Maria cooks for seven. Then for their children.

She never intended to start a company. She intended for nobody to leave her house hungry, which turns out to be a harder problem when your children live four time zones away.

Maria Francesca raised seven children in Accra. Meals were not events; they were arithmetic. Enough banku for seven, enough fish for seven, and a jar of shito on the table that got refilled more often than anyone measured. The recipe came from her mother in 1968 and has not been written down since.

The children grew up and left — Houston, Atlanta, the Bronx, London. What they discovered is what every diaspora kitchen discovers: you can find the ingredients, mostly. You cannot find the sauce. What sells in a jar abroad is either too sweet, too thin, or too polite.

“Every time she visited, she took over the kitchen. Grandchildren underfoot, every ring going, and jars lined up for people to take home. Then the jars ran out.”

Her eldest daughter

Maria’s Foods is the fix for the jars running out. Same recipe, same hour-plus in the oil, same refusal to thin it out for a wider audience. What changed is only the packaging — because a food this good has spent too long being sold as though it were a curiosity.

That is the whole idea behind what we call Afro Re-envisionism: African staples are not heritage artefacts to be kept under glass. They are products. They deserve design, a shelf, a price, and a straight face.

The time in the oil

Long enough that the oil separates and rises. There is no faster version of this.

Preservatives

The oil is the preservative, as it has always been. No thickeners either.
