What is shito

Ghana’s ketchup, if ketchup had teeth.

Shito — Ga for shitor din, “black pepper” — is a slow-cooked black pepper sauce from the Ga people of Accra. Dried fish, prawns and crustaceans, ginger, garlic and peppers go into hot oil for over an hour, until everything collapses into something darker and deeper than the sum of it.

It goes with kenkey, banku, waakye, steamed rice and gari. It also goes with eggs, noodles and things nobody in Accra would sanction. We’re not going to stop you.

Everything is ground, then cooked down in oil for well over an hour — long enough that the oil separates and rises, which is how you know it’s finished and how it keeps. No preservatives, no shortcuts, no thickeners. If the top layer looks like oil, that’s because it is. Stir it back in.

The dial, explained.

Every bottle carries the heat dial. We name the heat honestly — no "medium" that's actually mild.

Mild

All the depth, a whisper of burn. This is the jar the children's plates get, and the one your colleagues can handle.

Medium

The household default. Enough heat to be the point, not so much that it takes over the fish.

Hot

The one Maria actually eats. Buy it if you already know. Buy Medium if you're deciding based on this paragraph.
