What is shito, actually?

Banku & grilled tilapia

Shito means pepper in Ga. Shitor din — black pepper — is the sauce, and the name is doing a lot of work: what makes it is not the chilli but everything cooked down beside it.

Dried fish and prawns go in ground. So does ginger, garlic, onion. The whole thing sits in oil for over an hour, past the point where a cook raised on quicker sauces would call it done. You know it is finished when the oil separates and rises — which is also what makes it keep.
